BBQ Pork Flatbread with Corn-Bacon Relish and Yogurt Ranch

CORN-BACON RELISH INGREDIENTS

  • 4 slices
    Good Nature® Applewood or Pecan Smoked Bacon, diced
  • 1 small
    onion, diced
  • 2 cups
    corn kernels, fresh or frozen
  • 3 tbsp
    maple syrup
  • 1 tbsp
    whiskey
  • 1 pinch
    kosher salt & freshly ground black pepper

BBQ PORK INGREDIENTS

  • 4
    Good Nature® Boneless Pork Loin Chops, cut ¾” thick (see note)
  • ½ cup
    BBQ sauce
  • 1 pinch
    kosher salt & freshly ground black pepper

YOGURT RANCH INGREDIENTS

  • 1 cup
    greek yogurt
  • ¼ cup
    milk
  • 1 tsp
    dijon mustard
  • 2 tsp
    garlic powder
  • 2 tsp
    onion powder
  • 1 tsp
    kosher salt
  • 2 tbsp
    fresh chives and/or fresh parsley, finely chopped

FOR SERVING

  • 2 pieces
    naan
  • 4 oz
    cheddar-jack cheese, grated
  • 1 oz
    crispy fried onions

In a skillet over medium-high heat, sauté bacon until golden, about 10 minutes. Add onion and cook an additional 5 minutes or until onions are slightly caramelized and bacon is crisp. Add corn kernels, maple syrup, and whiskey and cook until corn is tender and syrup has caramelized, about 5 to 7 minutes. Season with salt and pepper. Remove to bowl; set aside.

Season chops with salt and pepper. In the same skillet over medium-high heat, brown chops about 2 minutes per side. Add BBQ sauce and turn chops to coat; scrape up any browned bits. Simmer for 3 to 5 minutes or until internal temperature reaches 145°F in the thickest part of the meat. Remove pan from heat and let cool. Once cooled, remove chops to cutting board and dice; toss in remaining sauce.

In a medium bowl, combine yogurt ranch ingredients. Cover and refrigerate until ready to use.
