Pulled Pork Nachos with Pickled Onions & Raisins

PICKLED ONION & RAISINS INGREDIENTS

  • 2 tbsp
    golden raisins
  • ½ cup
    red onion, thinly sliced
  • ¼ cup
    white wine vinegar
  • 2 tbsp
    sugar
  • ⅛ tsp
    kosher salt
  • 1 pinch
    red pepper flakes

AVOCADO CREMA INGREDIENTS

  • ½ large
    avocado
  • 2 tbsp
    sour cream
  • ½
    lime, juice only
  • 1 pinch
    kosher salt

NACHO INGREDIENTS

  • 1 ½ cups
    Good Nature® Perfectly Pulled Pork (see recipe), warmed
  • 8 oz
    tortilla chips
  • 1 ½ cups
    monterey jack cheese, shredded
  • 1
    jalapeno, thinly sliced
  • 2 tbsp
    cilantro, chopped

To make the pickled onions and raisins, place the raisins and onions in a small jar. In a small saucepan, bring the vinegar, sugar, salt, and red pepper flakes to a boil, stirring to dissolve the sugar. Pour over the onions and raisins and let cool.

To make the avocado crema, combine all ingredients plus two teaspoons water in a small food processor or blender and process until smooth. Set aside.

Preheat oven to 400°F. Spread the tortilla chips on a small sheet pan and top with pork, cheese, and sliced jalapeno. Bake until cheese is melted, about 4 to 5 minutes. Top with drained onions and raisins, drizzle with avocado crema, and sprinkle with cilantro. Serve immediately.
