Root Beer Pulled Pork Crostini

ROOT BEER PULLED PORK INGREDIENTS

  • ½ cup
    root beer
  • ½ cup
    ketchup
  • 2 tbsp
    lemon juice
  • 1 tbsp
    dark brown sugar
  • 2 tsp
    worcestershire sauce
  • ½ tsp
    smoked paprika
  • ½ tsp
    lemon zest
  • ½ tsp
    kosher salt
  • ¼ tsp
    garlic powder
  • ¼ tsp
    freshly ground black pepper
  • 2 cups
    Good Nature® Perfectly Pulled Pork (see recipe), warmed

SLAW INGREDIENTS

  • 2 cups
    green cabbage, shredded
  • 1 cup
    celery, thinly sliced
  • ¼ cup
    mayonnaise
  • 2 tbsp
    apple cider vinegar
  • 2 tbsp
    chives, chopped
  • ½ tsp
    kosher salt
  • ¼ tsp
    freshly ground black pepper

OTHER INGREDIENTS

  • 1 large
    baguette, thinly sliced
  • 2/3 cup
    blue cheese, crumbled
  • 2 tbsp
    parsley, chopped

To make the BBQ sauce, combine all ingredients except the pork in a medium saucepan and bring to a boil. Simmer uncovered until reduced to ¾ cup, about 15 minutes. Stir in the pork and keep warm.

To make the slaw, combine all ingredients in a large bowl and set aside.

Preheat the broiler. Lay the baguette slices on a sheet pan and toast until golden, about 1 minute per side. To serve, top each crostini with a tablespoon each of slaw and pulled pork and a teaspoon of blue cheese. Sprinkle with parsley and serve.
